Why this matters

Honey is one of the most adulterated foods on earth. The figure most often cited in industry reports is that around a third of all honey traded internationally fails authenticity testing — diluted with rice syrup, blended across origins, or passed off as something it isn't. The numbers vary by year and by source, but the direction has been consistent for two decades: the trust gap is wide, and it has been getting wider.

For specialty honey from smallholder producers, the trust gap is the central problem. A jar of premium single-origin honey from a remote Himalayan village is, from the buyer's point of view, indistinguishable from a jar of supermarket honey with a romantic label. The buyer cannot verify the village. They cannot verify the beekeeper. They cannot verify the harvest date or the lab results. Everything is taken on the word of whoever printed the label.

That is the gap that closes most of the value before it reaches the producer. When the buyer cannot tell the difference between authentic single-origin honey and a well-marketed blend, the authentic honey gets priced like the blend. The beekeeper, who actually did the work, is the one who pays.

What FarmLedger does

FarmLedger is the digital traceability system we built to close this gap for ApiCare honey, and eventually for any smallholder agricultural product where the producer has been priced out of their own value chain.

It works in three steps. When a beekeeper harvests a frame, they record the harvest in our app — village, hive, date, weight, and a phone photo. When the honey goes to lab testing, the test results are signed by Eurofins (or the testing lab of record) and attached to the same record. When the honey is jarred at our facility, each jar is given a unique code that links back to that complete record.

The buyer scans the code on the lid. They see the chain — beekeeper, hive, harvest, test, jar — laid out in plain language with photos and timestamps. None of it is taken on our word. All of it can be independently verified.

Where this goes

Honey is the first product. The same problem — invisible producer, untrusting buyer, value captured in the middle — exists in coffee, cardamom, cacao, vanilla, and most other smallholder export categories from South Asia, East Africa, and Latin America. The proof system we are building for ApiCare is, at the architectural level, the same proof system those categories need.

We are not in a hurry to expand. The first task is to make traceability work, end to end, for our four villages of Sikkim honey. If that holds — and the EU export pipeline we are building over the next eighteen months will be a real test — FarmLedger becomes something we can offer to other smallholder collectives.

The honey is what people taste. The system behind the honey is what we are actually building.
